My FIFA 11 was playing up in the same way. I got my PS3 serviced and after that it is working with no problems whatsoever.

Initially, when I got the game it had zero freezes or jerkiness but after playing for a few days this problem cropped up. Now, after the service everything is fine. During this freezing problem period, the PS3 was playing blu-ray movies absolutely perfectly.

You couldn't tell if there was any problem at all. I don't have any other PS3 game so couldn't verify if it was limited to FIFA 11 or not but my dealer confirmed this to be the case.

My suggestion is to get it serviced and then see if it solves the problem or not because FIFA 11 is more stressful on the lens than other games. I can't find the option of how to change the defending team anywhere and I always get a guy called Muckarelli in goal whoever the hell he is! EDIT just found out the only way to do it is to press the d-pad when the ball is in the area and repeat until completed.
